Herbalism, high demand due to the sheer quantity needed. Potions/elixirs sell well, and inscription uses tons of herbs. Also used to level up if starting from 1 in legion.

Mining, high demand - again, sheer quantity needed. Blacksmith, engineering and jeweler all use large quantities, especially if leveling a profession in legion, skinning, used in leatherworking, a lot is needed if leveling up in legion.

Skins are free for the grabbing, many people just leave corpses laying around and I love it.I generally use mine to make armor for my enchanter to dc, vs selling it. Amounts to 'free' mats (if you disregard the gold you would have gotten selling them) alchemy, several useful potions/elixirs can be made, uses tons of herbs. Blacksmithing, hoof plates are nice, but mostly I don't bother with this one so much, random armor etc if one of my toons needs it. I'd rather sell the ore.

Enchanting, useful buffs, and if you have a leatherworking feeding it, it can be lucrative. Pairs well with tailoring. Engineering, uses tons of ore, and mostly makes great toys for self, not sales. Of all the professions, this one is by far, the most fun, but you have to be an engineer to enjoy the perks. Not much for sale. Leatherworking, pair with skinning, dc for enchanting mats with some items selling decently.

Tailoring, cloth is free, if you have tailoring you will get more cloth drops than the other players. Plist extractor 1.2.0 for mac. And more bags.

Jewelcrafting, tons of ore, can prospect ore for gems. Another one I'd just as soon sell the ore and buy what I need if anything. Inscription, IMHO, this is about as useless as it gets now. I have not done much with inscription since they made the glyphs permanent a few years back.

Prior to that it was a decent money generator for me. Secondary professions - cooking, very useful for buffs, and certain foods sell well. Fishing, if you cook, you gotta fish.

Not to mention it can be relaxing:) first aid, used to be useful, I haven't applied a bandage in years. Archaeology - neat toys etc can be found, not to mention the sands of time. Easier to level if you are top level. Can be quite boring though. So once you get the mount, it's only useful for the mounted buff item. And most people don't want to spend money on it. LW has the item that keeps from you being dazed while mounted (doesn't do crap while not mounted).

Is JC even still in the game? It's so useless these days if you're not part of the Mythic raiding scene I haven't even bothered with gems at all. The gems just aren't worth the price for the stats they provide.

Engineering is extremely situational. Inscription is free money if you don't mind using the WoD Garrison to supply the herbs for lottery cards. I've gotten a few cards worth 3k or more and regularly get 200-500g from a day from it (assuming i do it every day). Beyond that, it's only good for cosmetic stuff for spells. I wish BS, LW, Tailoring, and JC had a purpose. They used to.

I speak from lone experience on the matter but I find the most useful professions to possess tend to be Alchemy/Herbalism, both because the products sell well and often, and are of quite potent demand. Enchanting also provides quite the aid, both for what the enhances it provides armor and the coin it can make on the sideline. Leatherworking has the 'daze-free' barding which is a godsend on characters that do not have tank specs, or are not tanks. Blacksmithing has the item that permits you to either move faster or to interact with items in the world (I'm not one hundred percent which one it was!). They may not be fun, and they may be a pain, but some more than others are certainly useful!
